Italian Flat bread

Gluten-free Italian flat bread sprinkled with mozzarella goat cheese and baked to crisp perfection!

Ingredients

  • 1 cup chickpea flour
  • 1/2 cup white rice flour
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon sea salt
  • 1 1/4 cup water
  • 2 tablespoons extra-virgin olive oil
  • 1/2 brick (100 grams) of Happy Days Dairies Mozzarella Cheese, shredded

Instructions

Preheat oven to 375F and line a medium sized baking sheet with parchment paper. Set aside.

Place flours, seasoning and salt in a large bowl. Whisk to combine.

Add water and olive oil. Stir until fully incorporated. Allow to sit for 5 minutes.

Pour batter out onto prepared baking sheet. It does not need to stretch to the sides, just pour and allow the batter to spread. The final product should be about 1/4-inch thick.

Sprinkle with cheese and slide the baking sheet into the preheated oven. Bake for 25 minutes. Remove from the oven, cut into slices, wedges, or crackers. Remove parchment paper from baking sheet and place cut pieces back onto the baking sheet. Bake for another 10-15 minutes to crisp up.

Serve bread with hummus, vegetables or sliced deli meats.
