Curried Grilled Cheese

Curried onions, mayonnaise and goat cheese in a grown up style grilled cheese.

Ingredients

  • 6 teaspoons extra-virgin olive oil
  • 1/2 yellow onion, sliced thin
  • 1 teaspoon curry powder
  • 1/8 teaspoon sea salt
  • 1 tablespoon mayonnaise
  • 100 grams thickly sliced Happy Days Mozzarella Goat Cheese Brick
  • 4 slices of gluten-free or whole wheat bread

Instructions

Add 2 teaspoons of olive oil in a frying pan. Heat on medium-high heat. Add onions, curry powder and salt. Sauté until onions are soft, about 5 minutes. Set aside to cool.

Spread mayonnaise on one side of each piece of bread. Layer with cheese slices and sautéed onions.

Preheat a second, clean frying pan on medium heat. Add 1 teaspoon of olive oil and allow to heat for 1 minute. Place sandwich in the oil and cook for 2-3 minutes. Remove sandwich from pan, add another 1 teaspoon of oil, flip sandwich and lay in the pan, uncooked side down. Repeat with second sandwich

Serve!
