Light and refreshing salad with carrots, dill and goat feta. Simple and delicious!

Ingredients

  • 2 cups shredded carrots
  • 1/4 cup crumbled Happy Days Goat Feta Cheese
  • 2 tablespoons fresh dill, chopped roughly
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon extra-virgin olive oil
  • 1 small clove garlic, minced
  • pinch sea salt

Instructions

Add all ingredients to a medium-sized bowl

Stir to coat and serve as is or refrigerate to allow the flavors to develop, about 2 hours.
