Tomato Feta Salad

Simple feta-based salad with fresh grape tomatoes, olive oil and a splash of vinegar

Ingredient

  • 1 cup grape tomatoes, halved lengthwise
  • 1/4 cup Happy Days Dairies Feta Cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon white wine vinegar
  • Sea salt and freshly ground pepper, to taste

Instructions

Break apart the feta cheese into large crumbles.

Slice the tomatoes and pick the parsley leaves. Chop them with a large knife, roughly is fine.

Add the veggies and cheese to a bowl and drizzle with oil and vinegar.

Add salt and pepper, to taste.

Marinade for a couple of hours; covered in the fridge, and serve!
