Creamy Tomato

Add a creamy kick to your favorite soup by dropping in a roll of Happy Days Dairies Soft Okanagan Goat Cheese. In this soup, we’ve sautéed onions and garlic, added in canned tomatoes, fresh herbs and pureed to a smooth, velvety consistency.

Ingredients

  • 2 teaspoons extra-virgin olive oil
  • 1 small sweet onion
  • 2 cloves garlic, chopped
  • Freshly ground pepper and sea salt, to taste
  • 1 can (28 ounces) diced tomatoes, undrained
  • 1 cup water
  • 1 roll Happy Days Dairies Soft Okanagan Goat Cheese
  • 2 sprigs fresh oregano, stems removed

Instructions

Add oil to a large saucepan. Heat on medium-high heat. Add onions, garlic, salt and pepper and sauté for 5 minutes.

Add tomatoes and water. Cover and bring to a boil. Once boiling, reduce heat to low and simmer for 15 minutes.

Add in goat cheese and oregano, stir and allow to cook for an additional 2 minutes.

Adjust with pepper and salt, as needed.

Transfer the soup to the jug of your blender and blend, on high, for 30 seconds, or until soup is smooth. Transfer to bowls and serve.
