Baked Mac and Cheese

Baked Mac and Cheese

Ingredients

  • 8 oz. Macaroni noodles
  • 1/2 C. Butter
  • 1/4 C. Flour
  • 2 C. Happy Days Goat Milk
  • 8 oz. Soft Okanagan Goat Cheese
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 1/8 tsp. Nutmeg
  • 2 tsp. Dijon Mustard
  • 1 C. Happy Days Goat Cheddar, grated
  • 1 C. Panko
  • 2 Tbsp. Butter
  • 2 Tbsp. Parsley, chopped

Directions:

Preheat the oven to 400

In a large pot bring water to a boil. Add the macaroni pasta and cook for 8 minutes. Drain and rinse to cool.

In a medium saucepan, melt the butter, then add the flour. Stir and cook for about 3 minutes, until bubbling. Add the milk and stir together. Once incorporated, add the Goat Cheese, Salt, Pepper and Dijon Mustard. Cook sauce until it thickens, about 4 minutes. Add cooked macaroni and Cheddar cheese and stir together. Pour into a casserole dish.

In a small bowl mix together the Cheddar, Panko, Butter and Parsley. Spread this over the macaroni and cheese.

Bake for 15 – 20 minutes, until the top is golden brown.

Serve hot.
