Lemon Pepper Rice

Creamy wild rice made with just 2 ingredients. A simple side dish for grilled chicken, fish or beef.

Ingredients

  • 1 cup gluten-free rice blend
  • 1 3/4 cup water
  • 1 roll Happy Days Lemon Pepper Soft Okanagan Goat Cheese

Instructions

Add rice and water to a medium-sized saucepan. Cover and bring to a boil. Reduce heat to low and cook for 40 minutes

Once the 40 minutes are up, remove lid, stir in goat cheese. There should be a bit of water left in the pan. If there isn’t, add 2-3 tablespoons until cheese is combined with rice. Return back to the burner with the lid on and cook for another 5 minutes.

Remove from burner, keep covered and let sit for 10 minutes.

Serve with lemon wedges and fresh parsley.
